Roasted Tomato Catsup
1 Small
Onion, Diced
1 Clove of
Garlic, Minced
1 tsp. Minced
Fresh Ginger
1 tsp. Curry
Powder
1 tsp. Cumin
1 tsp.
Cayenne Powder
1 T Paprika
1 T Tomato
Paste
˝ Cup Brown
Sugar
˝ Cup Cider
Vinegar
4 oz Oven or
Sun Dried Tomatoes
Soaked in Water and Chopped
(4) New York
Sirloin Steaks
Sauté onions in butter
until caramelized. Add
garlic and ginger, sauté 2 minutes.
Add curry, cumin, cayenne, and paprika cook 2
minutes. Add tomato
paste, brown sugar and vinegar. Cook down until thick like honey. Add tomatoes and chill.
Serve as a condiment along side Grilled NY Sirloin
Steaks.
